#MysteryDish is here again!

This month’s host is Christine from I Dig Pinterest and she gave us a great list of secret ingredients for us to choose from, head to her page to see the full list! The ingredients that I chose to incorporate into my dish was pork and pineapple. I got my inspiration form a dish that I made way back in the day from the Pioneer Woman’s blog, Pork Chops. I changed up a lot to fit what I have in the pantry and what my family will eat. Hope you enjoy!

Mmmmm… pork chops :)

I always forget how good they are and then I’m like “why don’t I make these more often?”

Oh right, cause I’m not super chef. . . and equally love tacos and pancakes and are much less impressive

But when I have the time to make these delicious pork chops, they never disappoint

Pork with Pineapple Fried Rice #MysteryDish

Pork with Pineapple Fried Rice #MysteryDish


  • 1/2 can of pineapple slices (you can use fresh)
  • 2 cups white rice
  • 4 whole Pork Chops
  • 1/2 teaspoon ginger
  • 1/2 teaspoon garlic powder
  • 1 Tablespoon Butter
  • 1 Tablespoon EVOO
  • 1/3 cup Soy Sauce
  • 1 Tablespoon Apple Cider Vinegar
  • 2 Tablespoons Honey
  • Salt & Pepper
  • 2 teaspoons Minced Garlic
  • 2 Eggs
  • 1 cup Frozen Peas & Carrots
  • 1 Tablespoon soy sauce


  1. Cook rice and set aside.
  2. Heat butter and oil in skillet
  3. Add the pork chops to the pan on medium heat
  4. Saute and brown both sides of pork
  5. Add soy sauce, apple cider vinegar, honey, and garlic.
  6. While the pork is cooking, add your pineapple slices in the pan to grill up, once grilled, set aside.
  7. Cook and reduce until the pork chops are completely cooked and sauce is thickened.
  8. Pour pork chops and sauce into a bowl, set aside
  9. Add more oil and butter to the pan and crack in the eggs
  10. Once scrambled, add your frozen peas and carrots with a tablespoon soy sauce.
  11. Add cooked rice and pineapple and stir
  12. Serve pork chops and sauce on a bed or the yummy rice and dig in

    This looks incredible! The pineapple fried rice sounds like a perfect compliment to pork chops. Can’t wait to see what ingredients you come up with for next month :)
