Do you ever have a night that you just need to bake something?
I have those types of nights all the time. Sometimes it’s just because I need something sweet and sometimes it’s been “one of those days.” No matter the occasion I will never turn down the urge to bake.
The other night I had that urge because dinner just didn’t hit the spot. I rushed to get dinner on the table and felt like I shoveled down my food. I wanted some time to myself to bake. My husband is always willing to give me that time because he gets to reap the benefits as well. Those benefits turned into some scrumptious cookies.
Butter Pecan Turtle Cookies
What you will need: flour, brown sugar, butter, pecan halves, salt, and chocolate chips
Yep this is a 5 ingredient cookie! I know what you are thinking. They look more like a “bar” but I’ve always called them cookies and that’s what I’m going with. 😉
Preheat oven to 350 degrees.
First, mix together the “crust,” 2 cups flour, 1 cup of brown sugar and 1 stick of butter (softened) until crumbly. Press it firmly down into the bottom of your pan. You can use a square pan or a 9×13 but I like a thick crust and cookie so I like them in the square pan.
Place the pecans in a single layer over the crust.
Melt 2/3 cup butter and 1/2 cup of brown sugar in a saucepan until boiling. Boil for about a minute and then pour over the pecans. Sprinkle top with salt and Immediately place in oven for 20-25 minutes.
Once out of the oven, immediately top with chocolate chips. While it’s cooling the chocolate will start to melt and then finish it off with another sprinkle off chocolate chips (I like having some of the chips whole on top).
Now to the easy part: Digging in!
These flavors work so well together. The caramel soaks into the crust and creates a gooey topping. The crunchy pecans add the best texture and the chocolate is…well, chocolate and these cookies hit the spot EVERY time!
